蘇格蘭Shortbread奶油酥餅

無鹽奶油120克
糖粉50克
鹽一咪咪
B
低筋麵粉120g
玉米粉或太白粉80g

[b]作法[/b]
1 A用打蛋器打至蓬鬆.顏色泛白(奶油要室溫軟化)

2 分2次加入篩過2次的B(才夠細緻)用刮刀以切拌跟按壓的方式讓粉類混合均勻(不要過度攪拌)因為沒有加蛋.完成的粉團像這樣.成砂粒狀用手一捏可以成團即可

3 將粉團全部放入保鮮膜內.擀成長20cm/寬12cm厚度1cm的長方形.冷藏30分鐘

4 將麵糰切成長條狀(長6cm/寬2cm)刀子要垂直用力往下切才漂亮

5 用牙籤在麵糰表面上戳洞.擺入鋪好烘焙紙的烤盤中.戳洞不要太密集.會裂的一蹋糊塗=.=

6 烤箱預熱170度C烘烤約25分鐘(記得調頭一次讓餅乾上色均勻)

7 置於網架上冷卻(連烤盤一起.一定要等完全冷卻了才動他)
